Here’s a good recipe to pop in your slow cooker and have ready at the end of the day during this busy time of the year.

Slow Cooker Mexican Taco Casserole

1 lb. ground beef

1/2 onion, chopped

1 cup of corn

1 can black beans, drained

1 can Rotel tomatoes

1/2 pkg. taco seasoning

Garlic salt to taste

2 cups cooked rice

8 ozs. shredded cheddar cheese

Brown your beef. Add onions, taco seasoning, tomatoes, beans and corn. Stir to combine and set aside.

Spray the inside of slow cooker with non-stick cooking spray. Spread the cooked rice in the bottom of the slow cooker. Sprinkle with garlic salt.

Spoon meat mixture over the rice. Top with cheddar cheese.

Cook on high for 2-3 hours or low for 4-6 hours.
