This is a twist on a casserole I always make using chicken instead of hamburger.

Mexican Chicken Casserole

2-1/2 cups chopped cooked chicken

15-oz. can Ranch Style Beans, undrained

10-oz. can diced tomatoes & green chiles, undrained

1 Tbsp dried onion flakes

10.5-oz. can Cream of Chicken Soup

1-oz. package taco seasoning

1/2 cup water

10 to 12-oz. bag tortilla chips, crushed

2 cups shredded cheddar cheese, divided

Preheat oven to 350º. Lightly spray a 9×13-inch pan with cooking spray.

Combine cooked chicken, Ranch Style Beans diced tomatoes & green chiles, onion, taco seasoning, cream of chicken soup, and water.

Put down a layer of crushed tortilla chips, followed by a layer of the chicken/bean mixture, then half of the cheddar cheese. Repeat layers.

Cover with foil and bake for 25-30 minutes, or until bubbly.
