The Purcell Public Library Penn Avenue Literary Society Book Discussion will be held from 6:30-8 p.m. today, Thursday, February 17.

Join the group for a lively virtual book discussion every first Thursday of the month. This month’s book is Dust Bowl Girls by Lydia Reeder.

The February Heart of Oklahoma Chamber of Commerce luncheon will be held Friday, February 18, at 12 p.m. at the Goldsby Community Center, 100 E. Center Road.

The luncheon speakers will be Senator Jessica Garvin, Rep. Sherrie Conley and Rep. Cindy Roe.

The 32nd Annual Purcell Livestock Show and Bonus Auction is slated.

The Livestock Show will be held at 7 p.m. Saturday, February 19, at the McClain County Fairgrounds.

The Purcell Bonus Auction will be held Thursday, February 24, at 6 p.m. in the Purcell Ag Ed Building.

The Knights of Columbus of Our Lady of Victory Catholic Church will hold its annual Beast Feast Saturday, February 26.

The event will be held in the parish hall at Fourth and Jefferson in Purcell.

Doors open at 6 p.m. Tickets are $20 per person, $30 per couple and $40 for a family.

All proceeds go to Knights of Columbus Community Projects.

This is one our favorites around my house!

Velveeta Chicken Rotel Spaghetti

2-3 boneless, skinless chicken breasts (chopped into bite sized pieces)

1 can Rotel Tomatoes with Diced Green Chiles (undrained)

1 green bell pepper (diced)

1 small white onion (diced)

Velveeta Cheese Loaf (16 oz.) – cut into 1 inch cubes

1 lb. package Thin Spaghetti Noodles

Cook chicken in 2 tablespoons olive oil or butter until almost done. Add bell pepper and onion to the chicken and saute until chicken is cooked and vegetables are soft.

Meanwhile, cook spaghetti noodles according to package directions.

Combine chicken, pepper and onions with the cooked spaghetti noodles while they are still hot. Add cubes of Velveeta cheese to the mix and stir until everything is combined and the       Velveeta cheese is completely melted.

Preheat oven to 350°.

Spread chicken noodle mixture into a 9x13 baking dish.

Bake at 350 degrees until bubbly, about 30 minutes.
