A special happy birthday to my funny awesome grandson, Thomas Robert Montgomery.

Thomas celebrates his birthday Sunday, August 1.

Happy anniversary John D.!

August 4, 1979 in Norman at noon was just about as hot as you can get. Why we decided that was a good time to get married I’ll never know.

Probably wanted to make sure we didn’t interfere with the Oklahoma Sooners football schedule.

Doesn’t seem like 42 years have gone by since that day.Time flies when you’re having fun!

This was so easy and so good. I replaced the chicken breasts with boneless, skinless chicken thighs.

Creamy Chicken Bake

4 chicken breasts, large

1 can cream of mushroom soup

1 can (10 ¾ oz.) condensed of chicken soup

1 cup sour cream

8 oz. can mushrooms (stems and pieces), drained

½ tsp. onion powder

1 tsp. chives, chopped

½ tsp. paprika

½ tsp. salt

½ tsp. pepper

Preheat oven to 350°.

Place the chicken breasts on a 9x13 baking pan, lightly greased with non-stick cooking spray and sprinkle with salt and pepper.

In a bowl, mix together the cream of mushroom soup, cream of chicken soup, sour cream, mushrooms, onion powder and chives. Spoon this mixture over chicken breasts in baking pan and sprinkle with paprika.

Bake in the preheated oven for one hour or until chicken breasts are ready and cream mixture is lightly browned.
