I made this over the weekend and it is so good!

Slow Cooker Hawaiian Chicken

4 boneless, skinless chicken breasts ( I used boneless, skinless chicken thighs)

20 oz. can pineapple chunks, with juice

1/2 cup soy sauce

1/2 cup barbecue sauce

1/4 cup brown sugar

2 tablespoons rice vinegar or apple cider vinegar

3 cloves garlic, minced

1 teaspoon ginger, minced (optional)

Salt and pepper to taste

1 green bell pepper,chopped

1 onion, chopped

Season the chicken breasts with salt and pepper and place them in the slow cooker.

In a medium bowl, combine the pineapple chunks with juice, soy sauce, barbecue sauce, brown sugar, rice vinegar, minced garlic, and ginger (if using). Stir until well mixed.

Scatter the bell pepper and onion around the chicken in the slow cooker. Pour the sauce mixture over the chicken in the slow cooker, making sure the chicken is well coated.

Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.

Once the chicken is cooked, shred them using two forks, allowing the chicken to soak up more of the sauce. Serve over rice.
