One of my sorority sisters, Michele Sleem Manning of Oklahoma City, served this at a get-together recently. I brought some home and it didn’t last long! It’s awesome!
Pineapple Sour Cream Cake
8 oz. can crushed pineapple in juice
1/2 tsp. baking soda
1 pkg. (2 layer) white cake mix
1 package (4 servings) french vanilla pudding
4 eggs
1/2 pint sour cream
1/4 cup oil
Combine pineapple with juice and soda. Mix well.
In a large bowl, combine cake mix and remaining ingredients. Add pineapple mixture. Blend.
Beat at medium speed for 4 minutes. Pour into greased and floured loaf pan.
Bake for 50 to 55 minutes. Do not underbake.
Cool in pan for 15 minutes and remove from pan.
Top with a glaze of lemon juice and powdered sugar combined.
