The Heart of Oklahoma Music Festival was a great event!

There was so much to do with all the vendors, food trucks and of course some really good music. The planners of the event did a great job of having everything so organized.

I’m looking forward to next years event!

I learned an interesting fact a few days before the music festival.

Chris Boyd, a member of the band Brother Haywood, is the son of Purcell’s Nova Boyd.

Nova wrote the Horseman’s Corner for years for The Purcell Register, a column about the Heart of Oklahoma’s horse industry.

Chris, from Norman, has been with the band for a number of years.

As I always say, it’s a small world and it just keeps getting smaller!

This recipe is made in the slow cooker with just 5 simple ingredients. A family favorite meal that’s perfect for busy weeknights.

Creamy Italian Chicken

10.5 ounce can cream of chicken soup

10.5 oz. can cream of mushroom soup

8 ounces cream cheese

1 packet dry Italian dressing mix (I like Good Seasons brand)

4 boneless, skinless chicken breasts

Salt and pepper, to taste

Spray your slow cooker with non-stick spray. Place chicken in the slow cooker.

Combine Italian seasoning, cream of mushroom soup and cream of chicken soup. Pour over the chicken. Cut the cream cheese into cubes and place on top of the chicken and sauce.

Cook on low for 5-6 hours or high for 3-4 hours. Shred chicken and salt and pepper to taste. Add 1/4-1/2 cup of chicken broth or milk if needed to thin it out. Serve over cooked noodles or rice.
